This salad is one of my favorite quick and easy go-to zucchini recipes. It’s a light and healthy salad full of flavor with just a few ingredients.

I like to spread out the shaved zucchini before I sprinkle the sea salt take make sure the salt is evenly distributed.
Add the tomatoes.
Add the diced cheese, half the shredded basil, ground pepper, and olive oil. Lightly toss. Top with the remaining shredded basil.

Zucchini and Tomato Salad

Ingredients:

  • 1 Zucchini, shaved with a potato peeler
  • 1 Tomato, diced
  • 1/4 cup mozzarella cheese, diced (or any cheese of your choosing)
  • 1 tbsp olive oil
  • 5-6 basil leaves, shredded
  • 1 /4 tsp sea salt (or to taste)
  • 1/4 tsp ground black pepper (or to taste)

Instructions:

  1. Layer the shaved zucchini into a shallow dish.
  2. Sprinkle the sea salt over the zucchini.  
  3. Add the diced tomatoes
  4. Add the mozzarella cheese
  5. Add olive oil
  6. Add half the shredded basil leaves
  7. Add the ground pepper and mix.
  8. Add the remaining basil leaves and enjoy.
